Board delays restaurant decision pending environmental review

NH CANTERBURY — Board of Adjustment continues restaurant hearing on Canterbury Country Store's dining expansion. The Canterbury Community Market, LLC, operated by Kayla and Manny Sanchez, seeks approval to add casual restaurant service to the store in the Center Historic District, with 18 seats and paper service only. Board member Gary Spaulding raised concerns about septic system capacity under state rules changed in February 2026, which now require one year of metering data for restaurant uses.
Chairman Jim Wieck called for a continuation to July 22, 2026, pending Department of Environmental Services approval, a parking site plan, and clarification of operating hours; the board voted to approve the continuation unanimously.
